Winemaking process and tasting
Made with grapes from 80-year-old Monastrell and Garnacha Tintorera vines, and 40-year-old Cabernet Sauvignon and Syrah vines. The grapes undergo fermentation and maceration in new 500-litre open casks, while resting softly on the skins, followed by malolactic fermentation in the same casks. The wine is then racked by gravity and aged for 30 months.
Deep ruby in colour, with aromas of dark fruits of the forest amid hints of sweet preserve and aromatic shrubland herbs.
The primary aromas in the glass are of the grapes themselves, giving way to notes of balsam and falling autumn leaves, as if we were walking through the vineyards after harvest.
GEN ONE RED goes well with Iberian ham, blue fish, either meat or fish tataki, as well as rice dishes, duck confit, red meat and hearty roasts.
Decanting is recommended before serving at 17º-18º C.
